Delicious African Banana Fritters are tender and very flavorful treat of ripe banana wrap in batter, deep fried until crispy and garnish with confectioner's sugar or any topping of your choice for a memorable treat.

- 5 Bananas, cut into small chunks
- 2 tbsp Powdered sugar, for topping
- 1 cup Plain flour
- 1 Egg
- Pinch of salt
- Oil to deep fry
- Milk
Make the batter by sifting the flour and salt in to a bowl with a tablespoon of cooking oil and small amount of milk. Mix well, add more milk and beat to a coating consistency.
Add egg, whisk and mix into the batter.
Dip each chunk of banana into the batter using a long pointed stick or fork, hold over the bowl for a few seconds to allow excess batter to drain off.
On medium heat, deep fry the bananas for 2 to 3 minutes, until crisp and golden, turning them once. Drain them on paper towels and transfer them to a serving platter. Repeat the process until all of the bananas have been fried.
Serve hot, sprinkled with powdered sugar.
