This creamy Mac and Cheese dish is a favorite of my children and without any limit they would like to enjoy this meal daily.

- 1 lb dried elbow pasta
- ½ cup unsalted butter
- ½ cup all purpose flour
- 1½ cups whole milk
- 4 cups grated mild sharp cheddar cheese
- 2 cups Clancy's cheese melt
- 2½ cups plain yogurt (whole milk)
- ½ Tbsp. seasoned salt
- ½ tsp. black pepper
- ¼ tsp. paprika (optional)
- 4 cooked bacon (optional)
Bring a large pot of salted water to a boil, add the dried pasta and cook 1 minute less than the package direction. Drizzle a little bit of olive oil to keep from sticking. Cook and set aside.
While the pasta is boiling, melt butter in a large saucepan over medium heat. Sprinkle flour and whisk to combine for 1 minute. Slowly pour in milk and yogurt and whisking constantly, until smooth.
Remove from the heat and stir in spices, cheeses until completely melted and smooth.
In a large mixing bowl, combine drained pasta with cheese sauce. Pour half of the pasta mixture into a non-sticky baking dish. Top with remaining cheese, then top with the remaining pasta mixture. Sprinkle the top with last remaining cheese and bacon bites.
Baked for 15 minutes, until cheesy is bubbly and lightly golden brown.
