Ingredients
  

  • 2 lbs Bone-in chicken pieces (such as drumsticks, thighs, or wings)
  • 1 cup Buttermilk
  • 1 cup All-purpose flour
  • 1 tsp Paprika (substitute with chili powder)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Cayenne Pepper (optional)
  • Cooking spray or olive oil

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil. Place a wire rack on top of the baking sheet.
  • In a large bowl, soak the chicken pieces in buttermilk for about 30 minutes. This helps to tenderize the chicken and adds flavor.
  • In a separate bowl, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well to ensure even distribution of the spices.
  • Remove the chicken from the buttermilk, allowing any excess to drip off, and dredge each piece in the flour mixture, pressing gently to adhere the coating.
  • Place the coated chicken pieces on the wire rack, ensuring they are spaced apart to allow hot air to circulate and create a crispy crust.
  • Lightly spray the chicken with cooking spray or drizzle with a little olive oil. This will help the chicken to brown and become crispy in the oven.
  • Bake the chicken for about 30-40 minutes, or until the internal temperature reaches 165°F (75°C). The coating should be golden brown and crispy.
  • Once cooked, remove the chicken from the oven and let it rest for five minutes before serving. This helps to retain its juices and ensures maximum tenderness.
