Eddoes Soup

Eddoes Soup is an excellent source of fiber and carbs. This makes it perfect for children, athletes and active individuals.

Ingredients
  

  • 1 bundle of eddoes
  • dry fish (optional)
  • shrimps (optional)
  • 1 sliced medium onions
  • 1 tbsp chicken flavor bouillon
  • 1 tsp cayenne pepper (optional)
  • 2 tbsp olive oil
  • 4 cups water (add more as needed)
  • 1 tbsp red palm oil (optional)

Instructions
 

  • Peel eddoes for cleansing, chop and add to pot
  • Add onions, peppers, seasoning and oilive oil
  • Prepare dry fish and shrimps, add to the pot of eddoes
  • on high heat, add water and cover soup to boil for 35 mins or more if needed
  • As broth is simmering down, mash few of the eddoes to create soup mix
  • Turn off heat, cool for 5 mins then eddoes soup is ready for serving
  • Add few drops of red palm oil for a delicious flavor and enjoy!
