Liberian Ginger Beer is a non-alcoholic beverage made with ginger, pineapple and lemon for a healthy, zesty and tasteful drink.

- 8 cups water
- 3 lbs ginger roots
- 1 fresh pineapple (ripe)
- ⅓ cup lemon juice
- 1 cup sugar
- 2 tbsps all spice
Wash and peel the ginger root. Cut it into 1/2 " pieces and set aside.
Wash the pineapple. Use a sharp knife to remove the peeling. Cut it into chunk pieces and set aside.
Move cut ginger into the blender. Add ⅓ cup of water. Cover and set blender to high. Blend until ginger coarsely chopped and mixed well into the water. Repeat with the rest of the ginger. Transfer this mixture to a large pot.
Repeat step 3 for the pineapple chunks and move to the pot of ginger.
Add lemon juice and all spice to the ginger/pineapple mixture in the large pot.
Add water and mix well. Pour the mixture through a metal strainer to remove the larger pieces of ginger and pineapple peel. Use a wooden spoon to press the juice through the strainer. Repeat this process three or more times to strain out the finer particles (use a clean cotton kitchen cloth).
Add sugar to juice and stir. Add more sugar to desired taste.
Store in the refrigerator for 2-3 hrs.
