Preheat oven to 375° and start preparing ingredients
In a mixing bowl, add cream of rice cereal, salt, nutmeg, sugar and baking soda, set aside.
In a blender, puree ripe bananas, freshly peeled ginger, and add few drops of water to smooth out the mixture.
Add banana & ginger mixture, eggs, milk, water, oil and vanilla extract to the bowl of dry ingredients.
Using a hand mixer or blender, mix all ingredients together evenly.
Grease baking pan with non-sticking cooking spray or butter, pour rice bread batter in pan and bake for 50-60 minutes
Rice Bread is ready when it is golden brown and test with a toothpick (when it comes out dry, bread is done).
Turn off oven and allow bread to cool for 10 minutes
Served Liberian Rice Bread with warm milk or your favorite beverage!
