- 2 lbs fresh chicken gizzards, cleaned and trimmed
- 1 tsp garlic powder
- 1 tsp onion powder
- 3 habanero peppers (adjust to taste), blended
- 2 tbsp creamy peanut butter
- 1 chicken bouillon cube (or 1 tsp powdered)
- 1 small onion, sliced
- Salt to taste
- 1 TBSP vegetable oil (for sautéing)
Boil the gizzards: Add cleaned gizzards to a pot with garlic powder, onion powder, a pinch of salt, and enough water to cover. Simmer for 30–40 minutes or until tender.
Prepare the glaze: In a food processor/blender, mix peanut butter with a little warm water to loosen it. Add blended habanero, bouillon, onions and stir into a smooth paste.
Sauté aromatics: In a separate pan, heat oil and sauté sliced onions until soft and fragrant.
Add gizzards: Transfer cooked gizzards to the pan and toss with onions for a few minutes.
Glaze and reduce: Pour in the spicy peanut mixture and stir until the gizzards are fully coated. Simmer on low heat until the glaze thickens and clings to the meat.
Serve hot: Enjoy with rice, fried plantains, or as a spicy appetizer.
