Liberian Cocodolo (Breakfast Porridge)

Hello Okra Pantry Family! I hope you all are doing great in your various countries and beautiful cultures. Have you ever heard of Liberian Cocodolo? I know you are puzzle right; we have a breakfast porridge known as “Cocodolo” that was introduced during the civil crisis in Liberia. This porridge is very nutritional and kept me and other children of Liberia alive when food was scare.

Liberian Cocodolo is a local slang for a cornmeal porridge that was ratio off as distribution food by the World Food Program (WFP) to Liberians during the civil war. Liberians felt in love with this porridge and even years after the civil war, many at home and the diaspora still yearns for this porridge, which can be found in our Okra Pantry Shop for sale (www.okrapantry.com/shop). Cocodolo is a corn soya blend that is nutritional for babies and the entire family. When my sister visited Liberia before my trip home, she brought some Cocodolo for my family. So, I decided to introduce my toddlers at the time to the breakfast porridge and their first reaction was so funny and very interesting. My son had his first taste and requested for more, while my baby daughter took one spoon with a funny face and the rest is history lol!

Also, the ingredients for this breakfast porridge are very easy to gather and simple to prepare for breakfast or evening comfort food. In terms of the cooking time, it is suitable for young children and adults after cooking at a simmering point for a minimum of five minutes and a maximum of twenty minutes or less. The cocodolo mix has a shelf life for at least twelve months from the date of manufacture when stored in a dry place. The cocodolo mix contains the following nutritional ingredients: corn, soybeans, sugar, milk powder, vegetable oil, and several vitamins (A, B1, B2, B3, B5 & etc…). Liberian Cocodolo (breakfast porridge)

Ingredients

  • 2 cups Cocodolo mix (Soya Blend)
  • 4 cups Water (add more as needed to smooth out lumps)
  • 2 tbsp Butter
  • cup Sugar
  • 1 can Evaporated Milk
  • 2 tbsp Nestle powder milk (optional)

Instructions

  • On low heat, add cocodolo mix to boiling water in a large pot and blend very well to remove all lumps or balls.
  • Once all lumps are smooth out, cook porridge for 15 mins and stir continuously to prevent burning at the bottom.
  • After cooking for 15 mins and as the porridge is getting thicker, add butter, evaporated milk and sugar for taste. Blend well for tasty porridge! Turn heat off and cool down for 5 mins.
  • In a bowl, pour few spoons of hot Liberian Cocodolo porridge, sprinkle powder milk on top and serve with your favorite sandwich, pancakes or doughnuts!
