Ingredients
  

  • 4 bags frozen steamed bitterballs (purchase from your local African grocery store)
  • 1/2 gallon palm oil/ toborgee oil (purchase at okrapantry.com/shop)
  • 1 tsp Liberian country soda (purchase at okrapantry.com/shop)
  • dry fish and meat variety of your choice
  • 1 small pepper or ground cayenne pepper (optional)
  • salt & seasonings of your choice
  • 1 small onions sliced
  • 1 medium pot of warm cooked rice
  • water

Instructions
 

  • Clean the bitterball - Place the frozen bitterball in a large bowl and rinse thoroughly with clean water. Transfer the cleaned bitterball to a clean cooking pot.
  • Boil the bitterball, meat, and dry fish - Place the pot over medium-high heat. Add the bitterball along with approximately 3–4 cups of water and your choice of meat and dry fish. Allow everything to boil for about 30 minutes, or until the bitterball and meats are tender.
  • Remove the bitterball and meats -Reduce the heat to low. Remove the cooked bitterball and the meat and fish from the pot. Place the bitterball in one large bowl and the meat and fish in another bowl. Reserve the cooking broth—you will need it for the soup.
  • Blend the bitterball -Using a blender, briefly blend the cooked bitterball for less than one minute. Be careful not to blend it into a smooth paste. The goal is to break it down while maintaining some texture. Set the blended bitterball aside.
  • Return the broth to the pot -Pour the reserved bitterball, meat, and fish broth back into the cooking pot and bring it to a medium-high heat
  • Build the Torborgee base -Add your seasonings, peppers, onions, and the blended bitterball to the broth. Stir continuously to prevent the bitterball from sticking or burning at the bottom of the pot.
  • Cook the Torborgee -Allow the bitterball soup to cook for approximately 30–45 minutes, allowing some of the liquid to cook down and the flavors to develop. Be careful not to let the soup dry out. Add approximately 2 cups of palm oil, or more according to your preference, and stir gently to combine.
  • Add the Liberian country soda -Using very low heat, mix the Liberian country soda with approximately 1 teaspoon of water, then carefully add it to the Torborgee. This traditional ingredient helps transform the bitterball mixture into the characteristic Torborgee soup.
    Important: The country soda may cause the soup to become temporarily foamy when added. This reaction is brief, and the foam/fumes should settle within a few seconds.
  • Add the meat and fish - Add the cooked meat and dry fish back into the pot. Stir gently and taste the soup. Adjust the seasoning as needed according to your preference.
  • Rest and serve -Turn off the stove and allow the Torborgee to rest and cool for approximately 10 minutes before serving.
    Serve your warm Liberian Bitterball Torborgee with rice and enjoy!
