CUTTING COLLARD GREENS

Collard Greens are among the healthiest and most flavorful vegetables you can eat. Rich in health-promoting nutrients and to help fight viruses, enhance lung health, offer heart protection, increase brain function and more. They’re even a rich source of antioxidants, calcium and vitamin E.

Recent research had shown that eating an extra serving of leafy vegetables, such as collard greens, daily can reduce the risk of type 2 diabetes by up to 15%.  Additionally, for those already suffering from diabetes, a hearty daily intake of leafy vegetables helps significantly as well, due to the amount of vitamins and minerals they contain.

Fresh Collard Greens take a bit longer to prepare but that homemade taste is always worth the effort.

Steps to Cutting Greens:

1) Wash Greens 2-3x with warm water and salt for total cleansing of bacteria or parasites.

2) Gather clean Greens in a large pan and select few in your hands as a bundle

3) The bundle greens can be chop in a blender or with a knife (the African way), but you have to be very careful of hurting your fingers – if you are using the knife process.

4) Continue the greens selection and chopping/cutting until the greens are ready for storing or cooking.

This completion timing will varies depending on the bundles of collard greens that you have purchased (30 mins – 1hr).

The next time that I cooked collard greens for my family I will show you the greens cutting process and provide you with my fried Liberian Collard Greens recipe!
