Happy Thanksgiving Day to the Republic of Liberia! On November 5th the first Thursday in November every year is celebrating Thanksgiving Day in Liberia. I prepare this Fried Ripe Plantain appetizer to celebrate thanksgiving day in Liberia and the harvesting of plantains. Liberia is located on the West Coast of Africa and is the oldest African Republic. I am a very proud Liberian woman residing in the United States and always missed my homeland. However, I will be visiting soon and so excited, ok let’s get back to Thanksgiving Day!

 Thanksgiving Day begins an occasion at the various places of worship. For instance in the Christian churches, members will bring the fresh fruits and vegetables of the harvest to the church and auctioned following the service. In addition, people go to their homes to feast and celebrate with their families, neighbors and friends.

Moreover, Fried Ripe Plantains are cook wherever plantains grow, from West Africa to East Africa as well as Central and South America and the Caribbean and in many parts of Southeast Asia. In Liberia or other African countries, Plantains are usually nice and full for sale in the market places. In the western countries, they are in oriental/ethnic stores or any regular grocery stores will have them.

Ripe Fried Plantain is a favorite appetizer of many young and old folks in some African regions.

Ingredients

  • 2 Yellow Plantains

  • 1/2 to 1 Cup of Vegetable Oil

  • 1/4 Tsp Salt (for taste/optional)

Directions

  • Using a small sharp knife, remove the ends of the plantains, and cut in half.
  • Slit the skin only, along the natural ridges of each plantain.
  • Ease up the edge of the skin and run the tip of your thumb along the plantains, lifting the skin.
  • Peel away the skin and slice the plantains lengthwise (sprinkle a pinch of salt for taste.) On medium, heat a little oil in a large frying pan and fry the plantain slices for 2-3 minutes on each side until golden brown.
  • When brown and crisp, drain on paper towels and serve hot or cold.

Notes

  • 1) When plantains are yellow, they are ripe and ready to enhance most meat, fish or vegetarian dishes. The riper the plantain, the darker and sweeter they are.
  • 2) Adjust the heat if necessary so that the plantain does not get too dark or cook too fast.
