Spicy Baked Tilapia with Sweet potatoes Fries

 Hello friends! Today’s menu is an easy and quick dish of Spicy Baked Tilapia with Sweet Potatoes Fries. Whenever I am having a very fun and relaxing day, I enjoy cooking some yummy seafood with my spices. As the summer is approaching, everyone is getting ready for those summer gatherings with family and friends around the grill barbequing, baking, cooking and serving various flavors of some good food. This spicy baked tilapia is a great addition to any menu for an appetizer, side dish or main course, just have fun with whatever that rocks your taste buds.

In many West African countries like Liberia, Spicy Baked Tilapia is commonly called “roasted pepper fish” by locals. This dish is served as a treat in the evening at many entertainment centers and bars as evening commuters stop by for happy hour or relaxation from a busy day in the office or working around town.

Therefore, Tilapia is an inexpensive, mild-flavored fish and can be found in all seafood market places. Many people love tilapia because it is relatively affordable and doesn’t taste very fishy but very flavorful. Like other seafoods, there are many health benefits to putting tilapia on the menu. It is full of essential vitamins and nutrients—like vitamin B12, niacin, vitamin B6, and pantothenic acid—that your body needs. Also like all sweet potatoes (such as purple and red sweet potatoes), they are an excellent source of vitamin C, vitamin B2, vitamin B6, and vitamin E. Additionally, they provide dietary fiber, potassium, copper, manganese, and iron and are low in fat and cholesterol. Sweet potatoes are also rich in antioxidants like polyphenols and carotenoids, which give the different varieties of sweet potato their distinctive colors.

All ingredients for this recipe can be purchased at any local grocery or ethic stores in your various community around the world. For storage, using the refrigerator is highly recommended.

Ingredients

  • 2 Fresh Tilapia Fish
  • 1 cup Olive oil
  • 1 tsp Ground black pepper
  • 1 tbsp Cilantro Leaves
  • 1 tsp Cayenne Pepper
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion Powder
  • 1 small Maggi Cube
  • ½ tsp Salt
  • 3 large Red sweet potatoes
  • Frying oil

Instructions

  • Clean fish and set aside
  • In a bowl add all spices, seasonings and olive oil. Whisk all ingredients to form a paste
  • Add fish to seasoning paste and marinade evenly
  • Add cooking spray on baking sheet and add marinade tilapia
  • Preheat oven/Nuwave to 400°, add tilapia to oven and bake for 35-40 mins
  • While the Tilapia is baking, peel and wash sweet potatoes
  • Slice potatoes in desired shapes and mix with remaining seasoning paste, with a dash of flour
  • On medium stovetop heat, fry potatoes until golden brown on both sides
  • Remove Tilapia from oven and serve with sweet potatoes fries, pepper sauce and ketchup
