Fortunately, the African continent is blessed with some of the most fertile land on earth, yielding succulent fresh fruits, grain and vegetables crops in dazzling variety and very organic.

On the continent of Africa, fruits are eaten at any time all throughout the day and they are an important part of African cooking. Plenty of African farmers grow commercially popular fruits that are exotic to the region, such as avocadoes, oranges, mangoes, and papayas. In other African countries the fruits have a market value or at least are valued by communities who have cultivated them. What people don’t grow in their own garden, they buy in open-air markets that offer everything from pineapples and coconuts to cucumbers and yams.

 The delicious tropical fruits in this recipe are very nutritious and beneficial to our wellbeing. They are a great source of vitamin C, B vitamins, fiber, and minerals. Daily consumption of these fruits can help with weight loss, aid digestion, disease fighting antioxidants to boost immunity.

This delightful and refreshing African Fruit Bowl can be eaten alone for a snack, dessert, a light lunch or supper or they can be served as side dish. A fruit bowl makes a fine dessert course for an African-style dinner.

Ingredients

  • 1 large Pineapple
  • 1 medium Coconut
  • 2 small Mangoes
  • 2 small Oranges
  • 1 large Papaya (know as Paw Paw in Africa)
  • Grapes
  • Whipped cream or ice cream (optional)

Instructions

  • Wash all fruits thoroughly.
  • Peel and slice mangoes, papaya and oranges. Crack open coconut using a hammer, drain the water and chop it into dice.
  • Cut pineapple in half and scoop out the flesh and chop it into dice. The two halves of the pineapple, scooped out, provide the "bowls" for this dish.
  • Combine all fruits and pile them back into the pineapple shells, pouring the fruit juices over.
  • Top with whipped cream or ice cream and enjoy!
